Kudzu Daifuku is made with Kudzu powder (arrowroot), that is why it is softer than usual Daifuku and is beautifully translucent (after thawing).
- For the uninitiated, there are many different types of Mochi in Japan. They are not all of the same texture. Daifuku is the softer Mochi, while Warabi Mochi is a chewier, jelly-like Mochi.
