- Ortiz anchovies are fished during springtime and are always prepared fresh. They are aged in saltwater barrels for a minimum of 6 months. Once the anchovies are properly preserved, they are filleted one by one using a knife and packed carefully by hand in olive oil. This meticulous preparation process has resulted in the compact texture and intense flavour of the anchovies.
