Difference between normal Shoyu and Nama Shoyu - Nama Shoyu is produced in much the same way as the natural traditional soy sauce.The key difference is that the heating process that removes the microorganisms at the end is replaced by a filtration removal process. Natural-food fans also tend to use nama shoyu as it is unpasteurized. The advantages of Nama Shoyu is in keeping the abundance of enzymes which gives it a fresher aroma and fuller taste which is preserved by not heating it.
